History becomes Novelty
Listed as a historic monument since 1994, the Abbaye des Vaux-de-Cernay has lived many lives. Originally founded in the 12th century as a Cistercian abbey, it was abandoned during the French Revolution and reduced to a mere stone quarry. Nearly a century later, the site was resurrected by Baroness Charlotte de Rothschild, who meticulously rebuilt each structure and even added new ones, shaping the estate into what it has become today. Briefly occupied during World War II, the Abbaye then passed through the hands of several private owners before being transformed into a hotel in 1988. It is in this extraordinary setting that Laurent de Gourcuff, founder of Paris Society, a leading force in French hospitality known for blending tradition with bold ambition — has chosen to write the next chapter in its remarkable story. It is thanks to this versatility that Paris Society offers timeless and lasting experiences, always with a French twist.
